Garlic Spaghetti With Chilli Oil

This recipe has just 5 basic ingredients and takes no time to cook. If you are a garlic lover then this is your go-to dish. Just boil some pasta, add garlic, drizzle some olive oil, garnish with basil and you are done. Make sure to use fresh basil and the pasta should be al dente. Adjust the spice level according to your flavor.

VARIATIONS
Beans / olives / onion / capers / spinach / kale / roasted or sundried tomatoes can also be added for interesting variations. 

Garlic Spaghetti With Chilli Oil

Yield: 2 servings

INGREDIENTS

200g spaghetti
200g mushroom
olives sliced (optional)
1 tbsp olive oil
1/2 cup fresh basil, chopped
2 large garlic cloves, minced
Pinch of salt and pepper

Chilli Oil
2 tbsp olive oil
1 tsp chilli flakes

INSTRUCTIONS
  1. Boil pasta according to packet instructions. Pasta should be firm to bite.
  2. Meanwhile, start preparing the chili oil. Put oil and chili flakes in a small saucepan and heat till oil starts bubbling. Switch off the flame and let the oil and chili mixture cool down. We do not want to burn the chilies.
  3. For pasta, pour 1 tbsp oil in a pan and add minced garlic to it. Let the garlic heat with the oil on a low flame.
  4. Once garlic becomes golden brown and the raw aroma of the garlic disappears add mushroom. Cook till mushroom losses all the moisture and becomes slightly brown.
  5. Now add the chili oil, salt, pepper, basil and olives.
  6. Add pasta and mix everything.
  7. Switch off the flame, adjust the seasoning and enjoy.
