Sweet Potato Falafel Burger

Sweet potato falafels are an interesting take on an already delicious falafels. These falafels are baked and tucked inside a burger with some refreshing vegetables like cucumber, tomato, lettuce and drizzled with greek yogurt dressing. Super tasty, high in protein, fiber and nutrients, it is an amazing healthy meal option.

Sweet Potato Falafel Burger

Yield: 4 burgers

INGREDIENTS

Falafel
1/2 sweet potato, boiled
1.5 cups cooked chickpeas
1/4 head of broccoli, roughly chopped
1/4 cup chopped coriander, roughly chopped
Handful of mint leaves, roughly chopped
2 big garlic cloves
1 tspn lemon juice
1 tspn cumin powder
1/2 tspn coriander powder
1 chili
Salt & pepper

Greek Yogurt Dressing
3/4 cup Greek yogurt
1 big clove garlic, finely minced
Handful of finely cut herbs such as chives / coriander / parsley / spring onion greens / dill
Salt & pepper

Burger
4 whole wheat burger buns
Greens such as argula / lettuce / baby spinach / kale
Vegetables such as cucumber / tomato / onion / olives / jalapeno / beetroot

INSTRUCTIONS
  1. For the falafel put all the ingredients in a mixer and grind roughly. Add very little chickpea water if required. You want the mixture to be course and chunky.
  2. Transfer to mixing bowl and adjust the seasoning if required. Make 4 medium to large sized patties.
  3. Preheat oven at 200 degree Celsius
  4. Place the falafel on a greased baking tray and chill in the refrigerator for minimum 15 minutes.
  5. Bake for 45 minutes or till the falafels are golden brown, flipping the falafels in between. The longer you bake, the firmer and crispier they will become.
  6. For the Greek Yogurt dressing mix everything properly.
  7. Now assemble the burger with the falafel, greens, Greek yogurt dressing and desired vegetables. Enjoy!
