Muesli and Rolled Oat Cookies

There is no better way to start the day other than with this muesli and rolled oat cookies. They are super delicious and super healthy. The recipe for these cookies calls for a combination of muesli, rolled oats and cornflakes, but you can always use full muesli or full oats to make them.

OTHER ADDITIONS
Toss in some almonds, choco chips, walnuts, dried cranberries or healthy seeds for extra flavor and crunch.

Muesli & Rolled Oat Cookies

Yield: 24 cookies

INGREDIENTS

115g butter (room temperature)
100g brown sugar
70g peanut butter
50g egg (room temperature)
55g flour, sifted
170g muesli + rolled oats + cornflakes
55g raisins
1/2 tsp baking powder
1/2 tsp cinnamon powder
Pinch of salt

INSTRUCTIONS
  1. Preheat oven to 170°C. Prepare a baking tray by layering it with parchment paper.
  2. Using an electric mixer, cream butter, and sugar until light and fluffy. Slowly add egg followed by peanut butter.
  3. Add flour, baking powder, salt, cinnamon powder. Mix until combined
  4. Add muesli, rolled oats, cornflakes and raisins. Mix everything.
  5. Drop small lemon size batter on the prepared baking tray about 1 inch apart.
  6. Press gently from the back of the spoon to form even circle.
  7. Bake until light brown colored, about 15 minutes.
  8. Let the cookies cool down completely on a rack before serving.
