Quick Salad With Yogurt Mayonnaise Dressing

A simple salad with a simple yet delicious dressing. This dish can be prepared in minutes and the dressing is insanely easy and to die for. There is no one way to make this salad and the variations are countless. For the dressing, I have used a ratio of 1:1 of yogurt to mayonnaise but this ratio can be varied according to taste. The amount of garlic used in this recipe can also be changed according to preference or omitted if required. Just use fresh greens and play with the combination of vegetables to create a healthy meal.  

Quick Salad With Yogurt Mayonnaise Dressing

Yield: 2 servings as main or 4 servings as side

INGREDIENTS

Salad
Lettuce or any salad leaves
Cucumber, radish or any other vegetable of choice
Salt & Pepper

Dressing
1/4th cup yogurt
1/4th cup mayonnaise
1 clove garlic, crushed into a fine paste
Chives or parsley or coriander or any herb of choice, chopped very finely
Salt
Pepper

Croutons
2 slices of bread, preferably not fresh
1 tbsp olive oil

INSTRUCTIONS
  1. Toss everything under salad together.
  2. For dressing, mix everything mentioned together.
  3. For croutons, preheat oven to 180°C and cut bread slices up into small cubes.
  4. Gently toss the bread cubes with olive oil, just to coat the bread with oil.
  5. Bake at for 15 minutes or until browned. Let cool. Croutons can be stored in a covered container or plastic bag for later use.
  6. To assemble the salad drizzle the dressing over the salad and add croutons.
