Roasted Vegetables

These roasted vegetables are the definition of simplicity. Nothing can get simpler than this dish. The vegetables are roasted in some olive oil and then sprinkled with nigella seeds. Just the pure flavour and sweetness of the vegetables, not tempered by additional spices and combined with nigella seeds makes this dish irresistible.

Greek yogurt / creme fraiche or enjoy as it is

Roasted Vegetables

Yield: 2 servings

INGREDIENTS

Carrots
Beetroot
Radish
Olive oil
Nigella seeds
Pinch of salt & pepper

INSTRUCTIONS
  1. Preheat the oven to 200°C.
  2. Toss the vegetables in olive oil and then place them on a baking tray.
  3. Do not overcrowd the tray.
  4. Bake in preheated oven for 20 minutes, flipping the vegetables after 10 minutes.
  5. Once done sprinkle some nigella seeds, salt & pepper. Serve immediately.
